Pie Five Pizza coming to Fayette Mall

The long-awaited Pie Five Pizza location has been selected: Fayette Mall will get the new fast-casual pizza franchise. The restaurant will be located across from Talbot’s, with an exterior entrance.

The restaurant, which lets customers pick toppings and have an individualized pizza in five minutes for a flat fee, is scheduled to open Aug. 21, according to Pie Five.

The Texas-based subsidiary of Pizza Inn announced it was coming to Lexington and Louisville in August 2013. This is expected to be the first of 10 locations in the area.

“I believe this is the pizza of the future,” said Pie Five Pizza co-owner Mark Mehrizi on Monday. “It’s pizza pies in 5 minutes or less, customized, with fresh ingredients.”

Mehrizi, who also owns a Pizza Inn in Frankfort, said he and co-owner Ford Lankford plan to open a second Pie Five on South Broadway near the existing Cookout around November and are looking for a third Lexington location before opening in Louisville.

Also at Fayette Mall, Teavana, a gourmet tea store, is expected to open by the holiday season.

Lexington also is getting a fourth Zaxby’s. The chain of fast-casual chicken restaurants will be coming to 435 Redding Road, according to a building permit issued to Martin Foods by the city for a $550,000 new restaurant.

The site was formerly the Nagasaki Inn.

Property owner Dan Rose said he and his partners, Stephen Dawahare, Kurt Rose and Jake Riordan, will build a free-standing Zaxby’s with a drive-through. Another building on the site will have space for another restaurant with a drive-through but the lease has not been finalized yet.

Rose said the Zaxby’s is expected to open in about 60 days.

Separately, a new Taco Bell is going in at 1970 Harrodsburg Road, the site of the recently torn down McDonald’s. A building permit for a $520,000 structure was issued to Charter Foods, which confirmed that the restaurant will be a Taco Bell.

And there are more restaurant changes near the University of Kentucky campus. A Dunkin’ Donuts kiosk will be opening up inside the Kennedy’s Wildcat Den Bookstore on Limestone to serve coffee, specialty drinks and doughnuts, near the end of July/early August.
